SUNDAY:
Meatloaf frosted with mashed potatoes. My Mom has a delicious meatloaf recipe and it is Jon’s favorite. One day I\’ll put it up on here…
And these amazing Salted Pretzel Chocolate Chip Cookie Dough Snickers Bars. They are INTENSE, and very good. Recipe here.
MONDAY:
Pioneer Woman’s Chicken Tortilla Soup. This soup has been one of my favorites for a long time now. Its so filling, it’s overwhelmingly flavorful and an absolutely favorite of mine. It does not disappoint.
I just tried making this last week for margarita pizza (I\’m sure I\’ll share that recipe in a week or so) AND IT IS FANTASTIC. I\’m never buying tomato sauce again. This week we will eat it on gourmet pasta with fresh mozzarella and cucumbers on the side. I\’m very excited-it’s really good.
WEDNESDAY:
Manti Chicken and grilled asparagus.
- 1/2 cup soy sauce
- 1/2 cup canola oil (or vegetable)
- 1 cup Sprite
- 1/2 tsp. horseradish
- 1/2 tsp. garlic salt
- 6-8 turkey breasts or chicken breasts (Or equal amount of chicken tenders)
- Marinade the chicken in a ziploc back with all of the ingredients for 8 hours and grill.
THURSDAY:
St. Patrick’s Day!! We\’ll be eating Corned Beef and Cabbage, per tradition. I haven’t gotten around to learning how to corn my own beef so I bought a pre-made hunk of meat and I\’ll be making some cabbage. I\’m actually looking for suggestions-we usually boil it but I keep seeing recipes on pinterest for saute\’d with balsamic glaze…but I\’m not sold. Any favorites??

DATE NIGHT!!
SATURDAY:
We grill! Or pizza!! But probably grill with all the yumminess Bountiful Baskets has had to offer lately.
