Tomorrow I\’ll be talking about my meal planning process, and today I\’m posting about my weekly meal plan. I\’ve set a goal to share weekly what we’re eating for the week in an effort to share recipes and look for input and suggestions-so share if you have any!
THIS WEEK:
SUNDAY:
This recipe has become a staple and a regular in my rotation. I can’t believe how yummy it is, how good it tastes the next day, and how much people LOVE it. We had company over yesterday and this delicious dinner did not disappoint! A few alterations:
- I love cooking with chicken thighs over chicken breast
- I forgot to grab fresh onions and dried onions work just as well!
- I use a can of Rotel with chilies and cilantro instead of just plain diced tomatoes and it is so very good.
MONDAY:
Sandwiches. I know it seems underwhelming, but I love a good ham and provolone with tomatoes/lettuce/sprouts and pickles on 9 grain and that’s what we’re eating. We have lots of broccoli with bountiful baskets this week so that will be our side dish with some dip, and some cut up honeydew melon for a sweet side.
TUESDAY:
Pork Chops and Brussel Sprouts. We also received brussel sprouts for bountiful baskets and I love them fresh! My Mom always boiled them growing up and that was a terrible mistake! Brussel sprouts were meant to be saute\’d in oil or butter with salt/pepper and garlic. They are so yummy and the most lovely shade of green when you cook them this way. I\’ll be doing that and this recipe for pork chops.
WEDNESDAY:
Shrimp and Tempura Veggies. You guys, I have no idea what to do with eggplant and we got 2 of them from bountiful baskets…sooooo…I went to my best resource when I\’m clueless-my Filipino friend that makes AMAZING food and she suggested tempura! I\’ve never made tempura veggies at home so this will be a first for me and I\’m excited to see how it goes… I found this recipe and it looks pretty authentic so we’re going to try it out and I\’ll post next week about how it goes…
THURSDAY:
I\’m going to be gone for dinner, and on those days I love to leave Jon and the girls with something fun for them to eat (mac\’n\’cheese/hamburger helper/ramen) and other junk food treats we don’t usually eat OR tell him to take them on a little daddy/girlies date. I\’m very blessed to have a husband that is a very good cook, but I still don’t usually make him use those skills. I\’ll leave it up to him to decide what he wants to feed them
FRIDAY:
It’s First Friday this week so we will most definitely be eating at the food trucks downtown! This gorgeous weather has me all excited to be back outside.
SATURDAY:
I\’m grabbing whatever fun meat is on sale to grill. I\’m sure I\’ll get some good grilling options with bountiful baskets as well-they almost always include zucchini, mushrooms or squash of some kind.
